Ingredients
  

For the rolls
  • 12 pieces lasagna noodles
  • 15 oz ricotta cheese
  • 1 piece egg
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups marinara sauce
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, mix together the ricotta cheese, egg, half of the mozzarella, and half of the Parmesan. Season this filling mixture with salt and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
Assembly
  1. Take a cooked lasagna noodle, spread a generous amount of the cheese mixture onto it, and roll it up tightly. Place the roll seam side down in the baking dish.
  2. Continue the process with the remaining noodles and cheese mixture.
  3. Cover all the rolls with the remaining marinara sauce and sprinkle the rest of the mozzarella and Parmesan on top.
Baking
  1. Cover the dish with aluminum foil and bake for 25 minutes.
  2. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  3. If desired, garnish with fresh basil and serve hot.

Notes

These lasagna rolls can be made ahead of time and stored in the refrigerator until ready to bake. Leftovers can be stored in an airtight container for up to three days.
