Mocktail Ingredients
  • 8-10 leaves Fresh mint leaves Spearmint is classic, but you can use peppermint for a stronger kick.
  • 0.5 lime Lime juice Fresh is best; about ½ lime per glass.
  • 0.5-0.75 oz Lavender syrup Store-bought or homemade; adjust to taste.
  • 1 cup Sparkling water Plain or lightly flavored; avoid tonic.
  • 1 cup Ice Cubes or crushed.
  • 1 slice Lime slice For garnish.
  • 1 sprig Lavender sprigs Culinary lavender only.

Method
 

Preparation
  1. Add fresh mint leaves and fresh lime juice to a sturdy glass.
  2. Gently muddle the mint and lime to release the oils — two to three presses with a muddler or the back of a spoon is enough.
  3. Pour in the lavender syrup and stir once to combine.
  4. Fill the glass with ice (crushed or cubes).
  5. Top with sparkling water and stir very gently to keep the bubbles.
  6. Garnish with a lime slice and a sprig of lavender. Serve immediately.

Notes

If you don't have lavender syrup, substitute with culinary lavender steeped in hot water and mixed with simple syrup. Store leftovers properly: Lavender syrup lasts 2 weeks in the fridge; mint lasts 2-3 days; pre-mixed drink (without sparkling water) lasts 24 hours.
