Ingredients
  

For the crust
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1/4 teaspoon salt
For the curd filling
  • 1 cup fresh mango puree
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lime juice
  • 1/4 cup unsalted butter
For serving
  • Whipped cream or fresh fruit for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, butter, powdered sugar, egg yolk, and salt to create the crust. Press the dough into the bottom and up the sides of a tart pan, ensuring an even layer.
Baking the crust
  1. Bake the crust for 15 to 20 minutes until it turns lightly golden.
Making the curd
  1. While the crust bakes, take a saucepan and over medium heat, combine the mango puree, granulated sugar, eggs, lime juice, and butter. Stir the mixture until it thickens and resembles a curd-like consistency.
Assembling and finishing
  1. Carefully pour the mango curd into the baked crust and smooth out the top with a spatula for an even finish.
  2. Return the tart to the oven and bake for an additional 10 to 15 minutes until the filling is set.
  3. Allow the tart to cool before serving. Top with whipped cream or fresh fruit as desired.

Notes

Store in the refrigerator wrapped tightly to keep fresh for up to three days. For longer storage, freeze without toppings.
