Ingredients
  

Cheese Mixture
  • 8 oz cream cheese, softened Use full-fat for best flavor and texture.
  • 1 cup shredded sharp cheddar cheese Freshly shredded melts better than pre-shredded.
  • 1 tbsp smoked paprika Can substitute with regular paprika or a pinch of cayenne.
  • 2 tbsp chopped fresh chives Can substitute with green onions.
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
Coatings
  • 1 cup assorted coatings (chopped pecans, bacon bits, dried cranberries, herbs, everything bagel seasoning)
Serving
  • as needed pretzel sticks or cocktail picks Optional, for serving.

Method
 

Preparation
  1. In a bowl, beat the softened cream cheese until smooth.
  2. Add the shredded cheddar, smoked paprika, chives, garlic powder, onion powder, and salt. Mix until evenly combined and creamy.
  3. Cover the bowl and refrigerate for 20–30 minutes to firm, making rolling easier.
Forming Bites
  1. Use a teaspoon to scoop the mixture—about 1 teaspoon per bite—then roll between your palms into roughly 1-inch balls.
  2. Wetting your hands lightly keeps the mixture from sticking.
  3. Spread your coatings on separate plates and roll each ball in a coating until well coated, pressing gently so bits adhere.
Final Chill and Serve
  1. Place the coated bites on a tray and refrigerate for another 30 minutes to set.
  2. Serve chilled on a platter with pretzel sticks or cocktail picks.

Notes

Can be made ahead of time; refrigerate up to 2 days or freeze for longer storage. For dairy-free, use vegan cheese.
