  • 1 cup mixed beans (black beans, chickpeas, kidney beans)
  • 1 cup shredded cabbage
  • 1 cup edamame (shelled)
For the Dressing
  • 2 tablespoons miso paste Use white or yellow miso for best results.
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon maple syrup (optional)
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the mixed beans, shredded cabbage, and edamame.
  2. In a separate bowl, whisk together the miso paste, sesame oil, rice vinegar, soy sauce, and optional maple syrup until the dressing is smooth.
  3. Pour the dressing over the salad and toss to coat well.
  4. Season with salt and pepper to taste.
  5. Serve the salad chilled or at room temperature.

Notes

To maintain crispness, add the dressing just before serving if making leftovers. Can be stored in the fridge for up to three days.
