Ingredients
  

For the Cookies
  • 1 cup Rolled oats Use old-fashioned rolled oats for superior texture.
  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar Packed
  • 1/2 cup Butter Softened
  • 1 large Egg
  • 1 tsp Baking soda
  • 1 tsp Vanilla extract
For the Filling
  • 1 cup Powdered sugar
  • 4 oz Cream cheese Softened

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, oats, baking soda, and spices.
  3. In a separate bowl, cream the butter and sugars until light and fluffy. Beat in the eggs and vanilla.
  4. Gradually add the flour mixture to the butter mixture, stirring until fully combined.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, ensuring they are spaced out.
Baking
  1. Bake for 10-12 minutes or until the edges are golden.
  2. Let the cookies cool completely on a wire rack.
Making the Filling
  1. For the filling, beat together cream cheese and powdered sugar in a bowl until smooth and creamy.
  2. Once the cookies are cool, spread the filling on the flat side of one cookie and top with another to form a pie.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months.
