  • 1 lb chicken thighs or breasts Substitutions like turkey or tofu can be used.
  • 1 cup honey Consider maple syrup for a twist.
  • 1/2 cup barbecue sauce Choose your favorite brand.
  • 1 cup chicken broth Low sodium version can be used.
  • 1 tablespoon soy sauce For added depth of flavor.
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe pan, heat olive oil over medium heat.
  3. Season the chicken with salt and pepper, then sear it in the pan until golden brown on both sides.
  4. In a bowl, mix together honey, barbecue sauce, soy sauce, and chicken broth.
  5. Pour the sauce over the chicken and bring to a simmer.
  6. Stir in the rice, ensuring it’s evenly distributed in the pan.
  7. Cover the pan with a lid or aluminum foil and transfer it to the preheated oven.
  8. Bake for about 30-35 minutes or until the rice is cooked and has absorbed the liquid.
  9. Remove from oven, fluff the rice with a fork, and let it rest for a few minutes.
  10. Serve garnished with green onions if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of chicken broth to keep moisture. Ensure chicken is heated to an internal temperature of 165°F (74°C).
