Preparation
- Preheat your oven to 375°F (190°C).
- In a large oven-safe pan, heat olive oil over medium heat.
- Season the chicken with salt and pepper, then sear it in the pan until golden brown on both sides.
- In a bowl, mix together honey, barbecue sauce, soy sauce, and chicken broth.
- Pour the sauce over the chicken and bring to a simmer.
- Stir in the rice, ensuring it’s evenly distributed in the pan.
- Cover the pan with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for about 30-35 minutes or until the rice is cooked and has absorbed the liquid.
- Remove from oven, fluff the rice with a fork, and let it rest for a few minutes.
- Serve garnished with green onions if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of chicken broth to keep moisture. Ensure chicken is heated to an internal temperature of 165°F (74°C).
