  • 1/2 teaspoon baking soda Adds lift and balances sweetness.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, stir together peanut butter and sugar until evenly combined.
  3. Add the egg and vanilla extract, mixing until the dough is smooth and glossy.
  4. Sprinkle in baking soda and salt, stirring until well distributed.
  5. Use a tablespoon or cookie scoop to portion dough, placing each ball about 2 inches apart on the prepared sheet.
  6. Press each ball with a fork in a crisscross pattern.
Baking
  1. Bake for 10–12 minutes, until the edges turn golden and the centers are set but not dry. Check at 9 minutes if your oven runs hot.
  2. Let the cookies rest on the baking sheet for 3–5 minutes to firm up, then transfer to a wire rack to cool completely.

Notes

Store cooled cookies in an airtight container for up to 5 days, or freeze for up to 3 months. For crispier cookies, flatten a little more and bake an extra 1–2 minutes.
