Preparation
- Preheat your oven to 350°F and prepare your baking sheet with either a silicone baking mat or parchment paper.
- In a stand mixer with a paddle attachment or using a hand mixer, combine the pumpkin puree, peanut butter, and eggs. Beat on medium-high for about 1-2 minutes until everything is well mixed.
- Reduce the mixer speed to low and begin adding the flour until it’s just incorporated. If the dough is sticky, gradually add more flour until it has the consistency of cookie dough.
- On a floured surface, gently knead the dough a few times until it comes together. Roll out the dough to about 1/4 inch thickness and cut it into your desired shapes.
- Place the shapes on the prepared baking sheet and bake for 20-30 minutes until the edges are golden and the treats are fully set.
- Let the treats cool completely on a wire rack. They will firm up as they cool.
Notes
These treats can be stored in an airtight container at room temperature for up to a week. They can also be frozen for several months. Consider adding cinnamon or rolled oats for flavor variations.
