Ingredients
  

For the soup
  • 1 package potstickers (frozen or homemade) pork, chicken, shrimp, or vegetable
  • 6 cups chicken or vegetable broth low-sodium recommended
  • 2 cups fresh vegetables, thinly sliced carrots, bell peppers, and bok choy work well
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • to taste green onions, chopped for garnish

Method
 

Preparation
  1. Heat 1 tablespoon sesame oil in a large pot over medium heat.
  2. Add minced garlic and grated ginger. Sauté 30–60 seconds until fragrant, taking care not to brown.
  3. Pour in 6 cups broth and bring to a gentle boil.
  4. Add the sliced vegetables and simmer about 4–5 minutes until tender-crisp.
  5. Add the potstickers to the simmering broth. Cook according to the potsticker package instructions (usually 4–8 minutes) until heated through and cooked. If using homemade potstickers, simmer until wrappers are translucent and filling is hot.
  6. Stir in 2 tablespoons soy sauce and taste; adjust seasoning.
  7. Ladle into bowls and garnish with chopped green onions. Serve hot.

Notes

For best results, use low-sodium broth; miso can be stirred in for deeper umami flavor. Customize vegetables based on what you have on hand. For heartier meals, serve with rice or noodles.
