  • 1 small apple Peeled, cored, and diced
  • 1/2 cup pumpkin purée
  • 1/2 cup coconut milk Can be substituted for plain water if sensitive
  • 1 large egg
  • 2 1/2 cups oat flour Can substitute with all-purpose flour
  • 1 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F and line a baking sheet with parchment paper or a silicone mat.
  2. Peel, core, and dice the apple into small pieces, placing them in a medium bowl.
  3. Add pumpkin purée, coconut milk, and egg into the bowl, mixing thoroughly until well combined.
  4. In a separate bowl, mix oat flour and baking powder until evenly distributed.
  5. Gradually introduce the flour mixture to the wet ingredients, stirring until a dough forms.
  6. Roll equal portions of dough into cookie shapes and place them on the prepared baking sheet.
  7. Bake for 10-12 minutes or until the treats are golden brown.
  8. Allow the treats to cool completely on the baking sheet before transferring them to a storage container.

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze for several months. Ensure apples are free from seeds.
