  • 1/2 cup pureed pumpkin canned or fresh
  • 2 tablespoons coconut oil softened
  • 4 tablespoons water plus more if needed
  • 2 cups whole wheat flour can be substituted with oat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 large egg

Method
 

Preparation
  1. Preheat the oven to 350 degrees F.
  2. In a large mixing bowl, combine the pureed pumpkin, softened coconut oil, and water until well mixed.
  3. Add the whole wheat flour, baking soda, and baking powder, then stir in the egg until the mixture is well blended.
  4. If the dough is too dry, add a bit more water to achieve a solid, slightly sticky ball of dough.
  5. Roll the dough out on a floured surface to about 1/4 inch thick.
  6. Use a cookie cutter to cut out the treats and place them on a lined baking sheet.
  7. Bake for about 30 minutes or until hardened, then allow them to cool completely before serving.

Notes

Store biscuits in an airtight container at room temperature for up to a week, or freeze for longer preservation. Add spices like cinnamon or parsley for extra flavor. Alternative flours can be used based on dietary needs.
