  • 2 tablespoons butter
  • 2 tablespoons flour to create a roux
  • 1 cup milk to create a creamy sauce
Flavor Enhancers
  • 1 cup pumpkin purée the star ingredient
  • 2 cups shredded cheese (cheddar or a blend) for a rich flavor
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper for seasoning

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions, then drain and set aside.
Making Cheese Sauce
  1. In a medium saucepan, melt butter over medium heat.
  2. Stir in flour and cook for about one minute, creating a roux.
  3. Gradually whisk in the milk, stirring until the mixture thickens to a velvety consistency.
  4. Stir in the pumpkin purée, cheese, cinnamon, nutmeg, smoked paprika, salt, and pepper until the cheese has melted and the sauce is smooth.
Combining
  1. Combine the cheese sauce with the cooked pasta, mixing well to coat each piece.
  2. Serve warm and enjoy the cozy, rich flavors of your homemade pumpkin mac and cheese.

Notes
