  • 1 can (15-ounce) pumpkin Use canned pumpkin puree, not pie filling.
  • ¼ cup peanut butter Make sure it's unsweetened and xylitol-free.
  • 2 large eggs Binding agent for the dough.
  • 3 cups brown rice flour Plus extra for rolling the dough.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine pumpkin, peanut butter, eggs, and brown rice flour until a cohesive dough forms.
  3. Turn the dough out onto a lightly floured surface and roll it out to about 1/8-inch thickness.
  4. Use a cookie cutter to create desired shapes for the biscuits.
  5. Transfer the biscuits to a baking sheet and poke holes in each biscuit's center.
Baking
  1. Bake for 1 hour or until the biscuits are dry and hard.
  2. Let the biscuits cool completely before storing them in an airtight container.
