Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Rolling Mixture
  • 1/4 cup sugar for rolling
  • 1 tablespoon cinnamon for rolling
Optional
  • 1 cup maple glaze optional for drizzling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
  3. Add in the pumpkin puree, eggs, and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  6. In a small bowl, combine sugar and cinnamon for rolling.
  7. Scoop out dough and roll into balls, then roll in the cinnamon-sugar mixture.
  8. Place on a baking sheet lined with parchment paper and flatten slightly.
Baking
  1. Bake for 10-12 minutes, or until lightly golden.
  2. If desired, drizzle with maple glaze once cooled.

Notes

These cookies can be paired with chai tea or coffee. For a more festive touch, arrange them on a platter with decorations. Store in an airtight container for up to one week, or freeze for later enjoyment.
