Ingredients
  

For the Chicken
  • 1 bag 24 oz frozen popcorn chicken Any brand; adjust sauce for larger or smaller bags.
For the Sauce
  • 1 jar 17 oz orange marmalade Use seedless for a smooth sauce.
  • 1 cup BBQ sauce Choose your favorite style (hickory, sweet, or spicy).
  • 6 tablespoons soy sauce Low-sodium preferred.
For Serving
  • 2 cups cooked white or brown rice Optional; use jasmine, short-grain, or brown rice.

Method
 

Preparation
  1. Preheat your oven or air fryer and cook the popcorn chicken according to the package directions until hot and crisp.
  2. While the chicken cooks, add orange marmalade, BBQ sauce, and soy sauce to a small saucepan over medium-low heat.
  3. Stir constantly for 4-6 minutes until the sauce becomes smooth and glossy.
Tossing and Serving
  1. Transfer the hot popcorn chicken to a large bowl and pour the warm sauce over it.
  2. Toss gently so each piece is coated and serve over rice or greens immediately.

Notes

For extra crunch, re-crisp the cooked chicken in a preheated oven at 425°F for 5 minutes before tossing with the sauce. To adjust sweetness, add rice vinegar or lemon juice to the sauce.
