  • 1 cup Quinoa Rinse before cooking to remove natural coating.
  • 1 can Chickpeas, drained
  • 2 cups Spinach Can substitute with other leafy greens like kale.
  • 1 medium Avocado, diced Can substitute with Greek yogurt or tahini for a creamier texture.
  • 2 tablespoons Olive oil For sautéing.
  • 2 tablespoons Lemon juice For dressing.
  • 2 cloves Garlic, minced Add more if you prefer a stronger flavor.
  • 1 teaspoon Cumin
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.

Method
 

Preparation
  1. Cook the quinoa according to the package instructions.
  2. In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add spinach to the pan and cook until it wilts, about 2-3 minutes.
  4. In a large bowl, combine the cooked quinoa, drained chickpeas, sautéed spinach, and diced avocado.
  5. Drizzle with lemon juice, add cumin, salt, and pepper, then mix well to combine all the flavors.
  6. Serve it fresh as a nourishing meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. It freezes well; let cool completely before freezing and reheat as needed.
