  • 2 medium sweet potatoes, peeled and diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • Juice of 1 lime
  • to garnish Fresh cilantro, chopped

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the diced sweet potatoes with olive oil, cumin, salt, and freshly ground pepper. Make sure they’re coated well.
  3. Spread the mixture out in a single layer on a baking sheet to ensure even cooking.
  4. Roast in the oven for about 25 to 30 minutes until the sweet potatoes become tender and develop a caramelized color, stirring halfway through for even browning.
Combining Ingredients
  1. Once the sweet potatoes are ready, transfer them into a large bowl and mix in the black beans, red bell pepper, corn, and red onion.
  2. Before serving, drizzle the mixture with lime juice and give it a gentle toss to combine.
  3. Finish with a sprinkle of fresh cilantro for that extra touch.

Notes

This salad can be enjoyed layer or mixed together. Pairs beautifully with grilled meats or can be served as a vegetarian meal.
