  • 2 pounds beef stew meat, cut into bite-sized pieces Chuck works well
  • 1/2 cup unsalted butter Can swap for olive oil for a lighter finish
  • 1 head garlic, minced (about 6–8 cloves) Adjust for milder garlic if desired
  • 2 pounds baby potatoes, halved Ensure even size for cooking
  • 1 teaspoon salt Use low-sodium beef broth to reduce sodium
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme Use fresh for a more vibrant taste
  • 1 teaspoon dried rosemary Sub fresh herbs if preferred
  • 1 cup beef broth Can use low-sodium version

Method
 

Preparation
  1. Pat the beef pieces dry and place them into the slow cooker.
  2. Add the minced garlic and the halved baby potatoes on top.
  3. In a small saucepan over low heat, melt the butter.
  4. Stir in the salt, black pepper, dried thyme, and dried rosemary until fragrant—about 1–2 minutes.
  5. Pour the seasoned melted butter evenly over the beef and potatoes in the slow cooker.
  6. Pour the beef broth into the slow cooker so it comes about halfway up the ingredients.
Cooking
  1. Cover and cook on low for 6–8 hours, or on high for about 4 hours.
  2. The beef should be fork-tender and the potatoes cooked through.
  3. Taste and adjust seasoning before serving. Serve warm and enjoy.

Notes

For serving suggestions, plate beef bites and potatoes over mashed cauliflower or buttered egg noodles. Add a side salad or garnish with parsley and cheese. Keep stored leftovers in airtight containers for up to 4 days and freeze for longer storage.
