Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil or another neutral oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika smoked or sweet, your choice
  • Salt and pepper to taste
  • 1 cup chicken broth low-sodium is fine

Method
 

Preparation
  1. In a small bowl, whisk together the olive oil, garlic powder, onion powder, paprika, salt, and pepper until a loose paste forms.
  2. Pat the chicken breasts dry with paper towels. Rub the seasoning paste over all sides of each breast so they’re evenly coated.
  3. Place the seasoned breasts in a single layer in the slow cooker.
  4. Pour 1 cup of chicken broth around the chicken to keep the meat moist.
Cooking
  1. Cover and cook on LOW for 6–7 hours, or on HIGH for 3–4 hours until the chicken is done.
  2. Remove the breasts and shred with two forks if desired. Spoon some cooking juices over the shredded chicken to keep it moist before serving.

Notes

For added flavor, sear the chicken breasts in a hot skillet for 1 minute per side before adding to the slow cooker. Use low-sodium broth for a lighter option, and store leftovers properly for best results.
