Method
 

Preparation
  1. In a large skillet, brown the ground beef over medium heat. Be sure to drain any excess fat after cooking.
  2. Add the chopped onion and minced garlic to the skillet; sauté until they soften.
  3. Stir in the black beans, corn, taco seasoning, salt, and pepper, heating everything through for about 5 minutes.
Assembly
  1. Preheat your oven to 350°F (175°C).
  2. Place a portion of the beef mixture in the center of each tortilla, sprinkle with some shredded cheese, and roll them tightly.
  3. Arrange the filled burritos in a baking dish and pour the enchilada sauce over the top.
  4. Sprinkle the remaining shredded cheese on top of the sauce.
Baking
  1. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  2. Serve warm and enjoy!

Notes

To enhance flavor, consider adding sautéed peppers or jalapeños. Use warm tortillas for easier assembly and avoid overfilling them.
