Preparation
- In a large skillet, brown the ground beef over medium heat. Be sure to drain any excess fat after cooking.
- Add the chopped onion and minced garlic to the skillet; sauté until they soften.
- Stir in the black beans, corn, taco seasoning, salt, and pepper, heating everything through for about 5 minutes.
Assembly
- Preheat your oven to 350°F (175°C).
- Place a portion of the beef mixture in the center of each tortilla, sprinkle with some shredded cheese, and roll them tightly.
- Arrange the filled burritos in a baking dish and pour the enchilada sauce over the top.
- Sprinkle the remaining shredded cheese on top of the sauce.
Baking
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Serve warm and enjoy!
Notes
To enhance flavor, consider adding sautéed peppers or jalapeños. Use warm tortillas for easier assembly and avoid overfilling them.
