Dressing Ingredients
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Let the salad sit for a few minutes to allow the flavors to meld together.
  5. Serve it as a side dish or pair it with homemade quesadillas for a complete meal.

Notes
