Ingredients
  

For the rice
  • 2 cups Sushi rice Use short-grain for stickiness; cook per package.
  • 1 teaspoon Rice vinegar Optional, for lightly seasoned rice.
  • 1/2 cup Neutral oil For frying; options include vegetable, canola, or grapeseed.
  • to taste Salt For sprinkling on fried rice squares.
For the topping
  • 8-10 oz Fresh tuna Sashimi-grade, diced.
  • 3-4 tablespoons Spicy mayo Store-bought or mix mayonnaise with sriracha to taste.
  • 1 Avocado Sliced or diced.
  • to taste Soy sauce Use low-sodium if desired.
  • to taste Wasabi Optional, for extra heat.
  • to taste Toasted sesame seeds For garnish.

Method
 

Preparation of Rice
  1. Cook the sushi rice according to package directions. Fluff, spread out on a tray to cool slightly, and optionally season with a teaspoon of rice vinegar.
  2. While warm, press the rice firmly into an oiled or parchment-lined pan in an even layer (about 1–1.25 inches thick). Chill in the refrigerator until very firm — at least 30–45 minutes.
Frying the Rice
  1. Turn the chilled rice slab out and cut into bite-sized squares (about 1.5–2 inches). Handle gently so they keep their shape.
  2. Heat 1/2–1 inch of neutral oil in a heavy skillet over medium-high heat. Fry rice squares in batches, 2–3 minutes per side, until golden and crisp. Drain on a wire rack or paper towels and sprinkle lightly with salt.
Preparing the Tuna
  1. Dice the fresh tuna into small cubes and combine them with spicy mayo in a bowl. Mix gently to coat and keep chilled until assembly.
Assembly
  1. Place a spoonful of the spicy tuna mix on each crispy rice square. Top with avocado slices or diced avocado.
  2. Drizzle lightly with soy sauce, add a dab of wasabi if desired, and finish with a sprinkle of sesame seeds.
  3. Serve immediately to maintain the contrast between warm, crispy rice and cool tuna.

Notes

If you can’t find sashimi-grade tuna, use seared tuna or cooked seafood alternatives. For a vegetarian option, consider spiced diced tomatoes or marinated tofu. Chill thoroughly for best texture and handle rice gently during assembly.
