Ingredients
  

Pasta
  • 9 pieces lasagna noodles Cook according to package instructions.
Filling
  • 15 oz ricotta cheese Whole-milk for richer filling; part-skim for lower calories.
  • 2 cups mozzarella cheese, shredded Reserve 1 cup for topping.
  • 1/2 cup Parmesan cheese, grated
  • 1 piece egg Binds the filling.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust according to preference.
  • Fresh basil for garnish (optional)
Sauce
  • 2 cups marinara sauce Use favorite jarred brand or homemade.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat to cool.
  3. In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper until well combined.
  4. Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish.
Assembly
  1. Place one noodle on a clean surface. Spread a generous layer of the cheese mixture along the noodle. Roll tightly from one short end to the other. Place rolls seam-side down in the prepared dish.
  2. Repeat with remaining noodles and filling until you have nine rolls.
  3. Pour remaining marinara sauce over the rolls. Sprinkle remaining mozzarella on top.
Baking
  1. Cover the dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for another 10-15 minutes until cheese is bubbly and slightly golden.
  3. Let the rolls cool for 5 minutes before serving. Garnish with fresh basil if desired.

Notes

For a greener version, add 1-2 cups cooked spinach to the filling. These can also be made ahead and stored in the fridge or freezer for later meals.
