For the Crust and Topping
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted Can substitute with coconut oil for a dairy-free version
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
For the Filling
  • 2 cups fresh strawberries, chopped Use ripe strawberries for best flavor

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a large bowl, mix together the all-purpose flour, rolled oats, brown sugar, granulated sugar, salt, and baking powder.
  3. Add the melted butter and vanilla extract to the bowl, mixing until well combined.
  4. Reserve half of the mixture and press the remaining half into the bottom of the greased baking dish to create the crust.
  5. Spread the chopped strawberries evenly over the crust.
  6. Crumble the reserved mixture over the strawberries, ensuring an even distribution.
  7. Bake for 25-30 minutes or until the topping is golden brown.
  8. Allow the bars to cool before cutting into squares and serving.

Notes

Serve with a scoop of vanilla ice cream or whipped cream. Store in an airtight container at room temperature for up to three days, or freeze for up to three months. Consider adding chopped nuts or spices for variations.
