Ingredients
  

For the filling
  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar for the strawberries
  • 1 teaspoon vanilla extract
For the crust and topping
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar for the dough
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed ensure it's very cold
  • 1/2 cup milk
  • 1 cup whipped cream or Cool Whip for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine the sliced strawberries with 1/4 cup sugar and the vanilla extract. Set aside.
  3. In another bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk just until combined.
  5. Spread half of the dough mixture into the prepared baking dish as the base layer.
  6. Layer the strawberry mixture over the dough, then drop spoonfuls of the remaining dough over the strawberries.
Baking
  1. Bake for 25-30 minutes or until the top is golden brown and firm.
  2. Allow the bars to cool before serving. Top with whipped cream.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Freeze leftovers tightly wrapped for up to 3 months.
