Street Style Thai Drunken Noodles

Ingredients
  

Noodles and Base
  • 8 oz Rice noodles Use according to package instructions.
Vegetables
  • 2 tbsp Vegetable oil For stir-frying.
  • 2 cloves Garlic, minced Provides aromatic flavor.
  • 1 cup Bell peppers, sliced Any color bell pepper is fine.
  • 1 cup Carrots, julienned Adds sweetness and color.
  • 1 cup Thai basil leaves Fresh basil for topping.
Sauces
  • 3 tbsp Soy sauce Choose high-quality for better flavor.
  • 2 tbsp Oyster sauce Enhances the umami flavor.
  • 1 tbsp Sriracha or chili sauce For heat; adjust according to taste.
Protein
  • 1 cup Protein of choice (chicken, shrimp, or tofu) Use whatever protein you prefer.
For Serving
  • 1 each Lime wedges Serve on the side.

Method
 

Preparation
  1. Prepare the rice noodles according to package instructions, then drain and set aside.
Cooking
  1. Heat a wok over high heat and add vegetable oil.
  2. Stir-fry minced garlic until fragrant.
  3. Toss in bell peppers and carrots and stir-fry for a couple of minutes until slightly tender.
  4. If using, add your choice of protein and cook until done.
  5. Stir in the cooked noodles, soy sauce, oyster sauce, and sriracha; mix well to combine all flavors.
  6. Add the Thai basil to the mix and toss until wilted and well incorporated.
  7. Serve hot with lime wedges on the side.

Notes

For storage, keep in an airtight container for up to three days. Reheat with a splash of water or oil to prevent sticking.
