Ingredients
  

For the glaze
  • 1-2 teaspoons Cajun seasoning Use a store-bought blend or homemade mix.
  • 2 tablespoons brown sugar Light or dark, helps the glaze caramelize.
  • 1 tablespoon olive oil Binds the glaze and keeps the fish moist.
  • 1 pinch salt
  • 1 twists black pepper Freshly ground for best flavor.
For the salmon
  • 2 pieces salmon fillets 6–8 oz each, skin on or off depending on preference.
  • 1 tablespoon lime juice Fresh is best for brightness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together Cajun seasoning, brown sugar, olive oil, a pinch of salt, and a few twists of black pepper until it forms a thick glaze.
  3. Pat salmon fillets dry with paper towels.
  4. Spread the glaze evenly over the top of each fillet.
  5. Arrange the salmon on the prepared baking sheet, spaced slightly apart.
Cooking
  1. Bake for 12–15 minutes, until the salmon flakes easily with a fork and the internal temperature reaches 125–135°F (52–57°C) for medium to medium-well.
  2. If desired, broil for the last 1–2 minutes for a caramelized top, watching closely.
  3. Remove from the oven and immediately drizzle with fresh lime juice. Let rest for 2 minutes before serving.

Notes

For less heat, reduce the Cajun seasoning or use paprika and smoked paprika instead. For a lower-sugar option, swap brown sugar for a teaspoon of maple syrup. Use skin-on fillets for better texture.
