Preparation
- Preheat your oven to 350°F (175°C).
- Prick the sweet potato several times with a fork and cook it in the microwave on high until tender, about 6 minutes.
- Allow the sweet potato to cool, then cut it in half and scoop the flesh into a bowl, discarding the skin.
- Mash the sweet potato using a fork or potato masher.
- In a large bowl, mix approximately 1 cup of the mashed sweet potato with whole wheat flour, eggs, and applesauce until a dough forms.
- Turn the dough out onto a well-floured surface, rolling it to about 1/2-inch thickness.
- Use cookie cutters to shape the dough, or cut it into strips with a pizza cutter for quick treats.
Baking
- Arrange the cookies on an ungreased baking sheet and bake until crisp, about 35 to 45 minutes.
- Cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
Notes
Store the treats in an airtight container at room temperature for up to a week. For longer storage, freeze them for a few months and thaw before serving. Consider adding spices like cinnamon for extra flavor or using peanut butter for variation.
