  • 1 cup unsalted butter, softened (about 226 g) Aim for softened, not melting.
  • 1/2 cup powdered (confectioners’) sugar (about 60 g) Gives a tender, melt-in-your-mouth texture.
  • 2 cups all-purpose flour (about 250 g) Measure properly to avoid dry cookies.

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Put the softened butter and powdered sugar in a bowl. Beat until light and fluffy, about 2–3 minutes.
  3. Gradually add the flour and mix on low speed or fold until the dough just comes together.
  4. Shape the dough into 1-inch balls or press into discs on the baking sheet. Chill for 15–20 minutes if desired.
Baking
  1. Bake for 15–20 minutes until the edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use salted butter if necessary but omit added salt. For gluten-free options, use a cup-for-cup gluten-free flour blend. For vegan, swap butter for a firm vegan alternative.
