Vegan Stuffed Shells

Ingredients
  

For the stuffed shells
  • 12 pieces jumbo pasta shells
  • 1 cup ricotta-style vegan cheese
  • 1 cup spinach, chopped
  • 1/2 cup nutritional yeast
  • 1 clove garlic, minced
  • 1 jar marinara sauce
  • to taste salt and pepper
  • to taste fresh basil for garnish (optional)

Method
 

Preparation and Baking
  1. Preheat the oven to 350°F (175°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a bowl, mix together the vegan cheese, spinach, nutritional yeast, garlic, salt, and pepper.
  4. Stuff each cooked shell with the vegan cheese mixture.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells on top of the sauce and cover with more marinara sauce.
  7. Bake for 25-30 minutes, until heated through.
  8. Garnish with fresh basil if desired and serve.

Notes

Leftover vegan stuffed shells can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven for about 15 minutes. To freeze, store before baking, then thaw and bake when ready.
