  • 4 large bell peppers Use fresh, in-season peppers. Consider different colors for added sweetness.
  • 1 cup quinoa or rice Cook according to package instructions.
  • 1 can black beans Drained and rinsed.
  • 1 cup corn Fresh or frozen.
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper To taste.
  • 1 cup shredded cheese Optional, for topping.
  • Fresh herbs For garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cook quinoa or rice according to package instructions.
  3. Cut the tops off the bell peppers and remove seeds.
  4. In a bowl, combine cooked quinoa/rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
Baking
  1. Stuff the mixture into the bell peppers and place them in a baking dish.
  2. If using, sprinkle cheese on top of the stuffed peppers.
  3. Cover with foil and bake for 30 minutes.
  4. Remove foil and bake for an additional 10-15 minutes until peppers are tender.
  5. Garnish with fresh herbs before serving.

Notes

For added flavor, consider sautéing onions and garlic before mixing with the stuffing. Adjust spiciness with jalapeños or cayenne. Swap out grains or add vegetables like spinach for variations. These peppers pair well with salad or sour cream.
