  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1 cup bell peppers, diced
  • 1 onion chopped
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and bell peppers; sauté until softened.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for a few minutes until heated through.
Layering and Baking
  1. In a baking dish, layer half of the tortilla chips, followed by half of the vegetable mixture, and half of the cheese. Repeat the layers.
  2. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
