  • 1 lb ground beef You can also use ground turkey or chicken as a leaner alternative.
  • 1 packet taco seasoning Opt for spicy taco seasoning for extra heat.
  • 2 cups shredded cheese Cheddar or Mexican blend.
  • 4 cups crunchy corn chips Fritos work well.
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1/2 cup chopped onions
Taco Toppings
  • lettuce Optional toppings.
  • sour cream Optional toppings.
  • salsa Optional toppings.
  • jalapeños Optional toppings.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with chopped onions until fully cooked, then drain excess fat.
  3. Stir in taco seasoning and diced tomatoes; cook for a few minutes to let the flavors meld.
  4. In a baking dish, layer half of the corn chips, followed by the beef mixture, beans, and cheese.
  5. Repeat the layers with the remaining ingredients, finishing with a generous amount of cheese on top.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven, add your favorite taco toppings, and serve warm.

Notes

For storage, allow leftovers to cool completely, then cover and refrigerate for up to three days. For longer storage, consider freezing for up to three months.
