Ingredients
  

Beef Preparation
  • 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes Chuck offers melt-in-your-mouth tenderness.
  • 1 tsp salt For beef seasoning.
  • 1/2 tsp black pepper For beef seasoning.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil Optional, for searing.
Potato Preparation
  • 1.5 lbs baby potatoes or Yukon Gold, halved or quartered
  • 1/2 tsp salt For potatoes seasoning.
  • 1/4 tsp black pepper For potatoes seasoning.
  • 1 tbsp olive oil For potatoes.
Garlic Butter Sauce
  • 4 tbsp unsalted butter, melted
  • 6 cloves garlic, minced (about 2–3 tbsp)
  • 1 tsp dried thyme or 1 tbsp fresh thyme leaves.
  • 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped.
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
Garnish
  • 2 tbsp fresh parsley, chopped For garnish.
  • to taste Grated Parmesan cheese For garnish.

Method
 

Prepare the Beef
  1. Pat beef cubes dry and toss with salt, pepper, garlic powder, and smoked paprika.
  2. Optional: Heat olive oil in a skillet over medium-high heat and sear beef cubes for 1–2 minutes per side until browned.
Prepare the Potatoes
  1. Toss halved/quartered potatoes with olive oil, salt, and pepper.
  2. Optional: Microwave or parboil potatoes for 5–7 minutes to slightly soften before adding to the slow cooker.
Make the Garlic Butter Sauce
  1. Whisk melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce in a small bowl.
Assemble in the Slow Cooker
  1. Place potatoes in the bottom of the slow cooker and top with beef cubes.
  2. Pour the garlic butter sauce evenly over the ingredients.
Cook
  1. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until beef is tender and potatoes are cooked through.
Garnish and Serve
  1. Sprinkle chopped parsley and grated Parmesan over the dish just before serving.
  2. Serve hot.

Notes

For storage, refrigerate in an airtight container for 3–4 days, or freeze for up to 3 months. Reheat thoroughly before serving. Use fresh herbs for better flavor and consider adding extra ingredients like mushrooms or lemon juice for variations.
